Chefs from regional university dining services put their talents to the test March 1 at the culinary challenge, one of the crowd-pleasing events at the Region IV conference of the National Association of College and University Food Services. The U-M hosted this year’s conference during the term break. Above, Andrew Thistlehwaite of the University of Notre Dame prepares his entry, which placed first of the four entries. Chefs have 20 minutes to prepare a signature entree, which is judged for presentation, taste, originality and ‘mise en place’ (preparation). The culinary challenge was one event in the four-day conference that was attended by more than 300 university food service delegates. Photo by Rebecca A. Doyle
